This recipe was very easy with a quick prep time of 10 min. First, Leg quarters are cut to make twelve pieces of chicken. **Important Note: Make sure your chicken is dried before seasoning and applying batter. This creates that crispy texture that is oh so good for fried chicken. After seasoning the chicken, I dipped the chicken in the egg mixture generously in order to for the pork rind mixture to stick and then rolled that all over the chicken. I used a wire rack over a baking sheet in the oven to get the chicken as crispy as possible. After the chicken comes out of the oven you should have crunchy, crispy chicken with so much flavor. The chicken was tender and juicy. Just Delicious.
With the pork rinds I made sure that I did not grate them in a food processor I just smashed them with my dough roller. Finely grated parmesan worked best in this recipe instead of shredded in my opinion. It was able to stick better to the chicken.
