Wellness takes hard work and sometimes things happen in our life that are not in our control. So, we run for comfort and in my case Tex-Mex is one of them. Tex-Mex is said to be an infusion of Texan and Mexican flavors combined into one delicious creation. These Grilled Chicken Quesadillas allow me to have the comfort cuisine that I crave so much but not with all the cholesterol. I used about 3 oz of chicken sliced or diced or ground chicken if you like and seasoned it with a blend of spices to bring forth a fajita flavor. Once my pan was heated with cooking spray I either cooked the vegetables first or the chicken, either way it was delicious. I set that aside so that I can work on the tortilla(s). I used a griddle pan that I bought at Burlington Coat Factory. Heated it to medium heat and added cooking spray. I used two tortillas, so I placed one on the griddle. The griddle marks just give it that Tex-Mex restaurant feel that I miss so much being away from my hometown. I placed on top of the tortilla the chicken and bell pepper mixture along with cheese.
Side note: If you decide to just eat half of this just put the mixture I one side of the tortilla and flip but if using two just cover the entire tortilla.
Here is where I place the other tortilla on top and used a spatula to flip to the other side to melt the cheese. My quesadilla did stay together. I just knew it was going to fall apart, but it didn’t. Once the cheese was melted, I slid the quesadilla onto a plate and began to add some of the optional ingredients. Lettuce, salsa and sour cream and a little fresca cheese really enhanced this dish to Tex-Mex café style. I hope you try this recipe for those time you need a comfort and look to food.
