Roasted Apple Chicken & Leeks

Leeks have a sweeter, milder taste than onions and what better way to use them than in this recipe “Roasted Apple Chicken with Leeks”. I love the combination of the flavor from the apples. This recipe’s flavor potential is very high on my scale, so I made a rub to put on the chicken.

I combined all the seasonings for the rub in a small food processor and sprinkled it all over the chicken. I seared the chicken in a cast iron skillet. I used a cast iron because its easier to just throw it in the oven after the stovetop steps are done. A one skillet meal. After the chicken was seared, I removed them from the skillet. To use the same chicken flavor I immediately added garlic, onion and leeks and cooked them for a minute or two and then added the apple juice. I thought about adding Apple Cider Vinegar (ACV) but wanted a sweeter taste for this dish. I added the chicken back to the skillet and distributed the apples on top of the chicken and sprinkled with some of the reserved RUB. I placed the skillet in the oven to cook for about 45min to 50min.

While that was in the oven, I took some chopped leeks and apples and soaked them in lemon juice to garnish with for a fresh taste and presentation. I removed the dish from the oven and allowed it to sit for 15 min before garnishing with the apples and chopped leeks.
