Quick Vegetarian Meal

Sometimes I opt for quick meatless meals if I’m busy working from home or just don’t know what to make. I always seem to have left over brown rice or quinoa in the fridge. This time it was quinoa from the night before. I decided to do a vegetable “stir fry”. I simply added quinoa and frozen peas & carrots together in a bowl and microwaved them for two minutes. I added low sodium soy sauce and pepper for flavor. If I needed more salt, I would wait at serving time after I have tasted it.

I need a protein, so I opted for eggs on the side instead of in the “stir fry.” I just heated some olive oil in a small skillet. I then added spinach and cook for about a minute then added the egg whites. I continued to cook the spinach and egg mixture to almost done and then added the cheese. I cook the eggs until done to my liking and removed skillet from heat. Plate and serve, that’s it. You can add siracha for more flavor and/or heat.
