Vegetarian Taco Salad

Taco salads and nachos are my go-to comfort food. I grew up in Texas and Tex-Mex is life amongst other things. As a practicing chip-a-holic, the crunch is what makes a great chip. I wanted a vegetarian meal for variety in my diet. I decided to use “The Original Boca Veggie Crumbles” for my taco “meat” in this meal.

First I cut up about three yellow corn tortillas into 8ths. You can use white corn tortillas if you so desire. It was very easy to make my own tortilla chips. I lined a baking sheet with parchment paper and sprayed cooking pray on the lining and the tortilla triangles. Here is where is sprinkled salt on the chips. If you’re trying to watch your salt intake a salt substitute can be used. I baked the tortillas for about 10 minutes removed them from the oven once I was satisfied with the darkness of the chips and set them aside.

I started working on the taco “meat” by simply heating a skillet with cooking spray, throwing in the onion, taco seasoning and veggie crumbles. Cook this for about 3-4 minutes. Once this is done, I assembled the salad starting with the greens, I chose spinach. After that I added the “meat” mixture and the chips on the side. The toppings I used were sour cream, salsa, jalapenos, black olives and mozzarella cheese.

This meal was delicious, satisfying and comforting. I hope you try this meal and love it as much as I did.
