Greek Lamb Lasagna
I wanted to use lamb instead of ground red meat or poultry. I began cooking the lamb with the garlic. I know there is a lot of veggies in this sauce, but I like to bulk up my food with veggies and it gets my family to eat them without any fuss.
I added the tomato paste first before the rest of the tomato ingredients to make sure I get the texture and boost of flavor I was looking for. One boost of flavor was adding the agave. I like a sweet tomato sauce. With the combination of agave and the cinnamon and nutmeg in the Greek seasoning, provided the sweet taste I like without using white sugar.
The layering is the easy part. I decided not to add any ricotta in this dish. I’m not a big fan anyway so I eliminated it and it also lowered the calorie intake. So, layer after layer until the result was hot layers of cheese and lamb. We had the left overs the next day and the flavor had set in well. See, leftovers can be good.
