Texture plays a big part in my food selection. I’m not a fan of a mushy texture i.e. oatmeal, malt-o-meal. But I have made an exception with Barley. It can help you create some creamy recipes for either breakfast or a side for dinner but without the mushy texture.

We are still in the cold temperatures and I wanted to make something that will be warming, filling and nutritious. “Cream of Mushroom Barley” is what I decided to make along side chicken of the same. I know there is a soup recipe but I’m not a big fan of it and decided to make it heartier than a soup.

Barley is an easy grain to cook. You simply boil one cup of barley with 3 cups of water or broth with ½ Tbsp of salt until the water is gone. And here is where you can just simply get creative. Since were making “Cream of Mushroom Barley” we will need mushrooms of course and I used about 4 ounces of “Campbell’s Cream of Mushroom Soup” the fat free kind. I also added a little sour cream for more creaminess and seasonings and blended it all together.

I like to serve this hot along with a protein or just by itself. I hope you try this and can have this apart of your nutritional needs.
