Creamy Spinach Mushroom Chicken
I noticed I start mixing my seasonings ahead of time in stead of as I cook as I usually do. So, I started by mixing the seasonings first, but you can do as you please. Then, I took that same seasoning and seasoned the chicken leaving about 1 tablespoon of it for later.
Your cast iron skillet should be heated with the olive oil and garlic by now so just sear the chicken on both sides for 3-5min. Set the chicken aside to add later. Then add the butter, onion, mushrooms and spinach and sauté as you add these ingredients. So, the cream cheese and mascarpone take the longest to melt down even at room temperature to me but having the cheeses at room temperature helps to cook them quicker. Then, I add the sour cream, almond milk and the tablespoon on seasoning mix that I saved for later and blended everything well.
Here you add your chicken back and base it with the sauce and cover the chicken with the shredded cheese. I used mozzarella. Bake for 40 min at 375* and you’re done. I wish I could find the words to describe the taste of this meal but all I can come p with is Mmm Mmm Mmm!
