Grilled Greek Chicken

A couple of weeks ago I wanted to try different Greek recipes out just to shake things up a bit for dinner. This recipe for “Grilled Greek Chicken” was simple and tasty. I paired the chicken with whole wheat pasta, but a salad would be great as well.

I have a skillet grill, so I used this to start the chicken. I tenderized the chicken first and seasoned it. After the skillet was hot enough, I sprayed with cooking spray and cooked chicken not all the way but enough to get the grill marks on the meat for presentation and to shorten the cooking time in the oven. Once the chicken was set aside, I used my handy cast iron skillet. I’m in love with my cast iron skillet and I can’t wait to pass it down to my daughter. In the skillet I heated the olive oil and added the garlic, onion, tomatoes and olives. I added the chicken and a splash of lemon for a fresh taste and sprinkled with feta cheese.

Now here is the option to place the chicken that you have put together so well in the oven or just grill the chicken for a few more minutes and avoid the oven all together. Once the chicken is done in the oven just remove and serve with your choice of side(s).
