A cast iron skillet and a one pot meal recipe that is quick, easy and packed full of flavor is all you will need to create this delicious meal. I’ve been cooking variations of this meal for as long as I can remember, and the combinations never get boring. This combination includes nicely seared rosemary chicken covered in a delicious caper cream sauce. A guarantee to be a hit, this recipe is also low in carbohydrates and sugar. I just grabbed my cast iron skillet and made sure it was hot for a sear of the seasoned chicken. I used thighs and legs. Once that was done, I threw in the garlic and lemon juice for the acidic taste that pairs well with the mascarpone cheese that follows with the additional ingredients. I stirred until well blend to remove the bits at the bottom and added the chicken back to the skillet. I love to cover my chicken with the cream sauce before putting it in the oven with a few sprigs or leaves of fresh rosemary. It gives a nice presentation. Dinner is complete. I usually pair this with zucchini noodles, cauliflower rice or just simply by itself.
A quick homecooked meal for the entire family. Keep this recipe handy for those night you need a fulfilling meal but quick, easy and flavorful. I hope you and your family try this recipe. All the BEST!
