I was thinking of a way to use the rest of my mascarpone cheese. My husband had a mild sweet tooth and wanted something flavorful and sweet. A Mascarpone cake sounded delicious, but I was inspired to do a health friendly version. A mascarpone cake layers are made of lemon zest, berries and mascarpone. So, I removed the cake part and decided on a Lemon Berry Mascarpone Parfait.
This recipe is packed full of a tart, sweet flavor that will dance in your mouth. The best thing is that you’re able to adjust those taste to as little to as much as you like. My husband has not requested anything sweet for quite a while, so this combination of lemon and berries were a match made in heaven.
I love my snacks and/or meals to be easy and these parfaits were so simple to do. All you do is take your favorite berries and add lemon zest and lemon juice. Mix cream cheese and mascarpone cheese together with a little almond milk to your own consistency. Layer and Enjoy!
